I used to struggle when I was invited to potlucks because all I could really make was California Rolls and not everybody likes that but here is a recipe that I think everyone will love.  As a Latin American if there is rice involved, I know it must be good.

Ingredients:
  • wild rice ( In this month's Better Homes and Garden they suggest using leftover rice.  I used wild rice because I had half a bag lurking in my pantry and I have to say I can't imagine using plain old rice.  I love the texture and taste of the wild rice.  But I do support using whatever you have in your pantry because that's what makes this meal easy to make.)
  • whatever veggies you have in your fridge chopped
  • lemon vinaigrette (I used this recipe)
 Serve cold.
This was so good and refreshing and the lemon vinaigrette is a nice flavor to mix with these veggies.  I made the rice in my rice cooker mid afternoon and then let it cool while I chopped the veggies.  Then I did my usual mix all ingredients in big bowl and let it cool off some more in the fridge til dinner. Trust me this is super easy to make and super delicious.  It's also very pretty and for that reason I think it's a nice dish to bring over to a potluck.
