
Ingredients:
- wild rice ( In this month's Better Homes and Garden they suggest using leftover rice. I used wild rice because I had half a bag lurking in my pantry and I have to say I can't imagine using plain old rice. I love the texture and taste of the wild rice. But I do support using whatever you have in your pantry because that's what makes this meal easy to make.)
- whatever veggies you have in your fridge chopped
- lemon vinaigrette (I used this recipe)
This was so good and refreshing and the lemon vinaigrette is a nice flavor to mix with these veggies. I made the rice in my rice cooker mid afternoon and then let it cool while I chopped the veggies. Then I did my usual mix all ingredients in big bowl and let it cool off some more in the fridge til dinner. Trust me this is super easy to make and super delicious. It's also very pretty and for that reason I think it's a nice dish to bring over to a potluck.

Looks pretty, and delicious. We don't do lots of rice here, but I bet I could do this with quinoa. I LOVE rice, but Kevin can't have much of it. :(

Love the idea of using wild rice. It has such a nutty crunch. This is a very healthy salad and looks so pretty with the yellow and red peppers. Perfect salad for our summer heat.
