Fresh Fridays : Smoked Salmon & Rice

Happy Friday!  How about a quick and fresh meal?  Well this one is one of my go to meals for lunch.  I love to eat brown rice or quinoa and top it off with some smoked salmon.  Add a few cut tomatos and you are done!  And since it is friday, how about a little vino?  I found this "table wine" @ Trader Joe's and it was very fresh and crisp.

I don't have any plans for the weekend, maybe I will take a tip from our friends below and just lay around the house!

I have no plans either except to go earring shopping. :)
I am the worst about never buying new earrings. I just keep wearing the same old ones.

I love smoked salmon! My dad went to alaska over summer to visit his friend and came back with 20lbs of fresh smoked salmon that he smoked himself!!! have a great weekend :)

see, if you were in the south, you'd slice up those tomatoes, sprinkle them with salt and pepper, and put them on bread loaded up with mayo. YUM!
