Labor day might be over but it's still summer in LA. Although it is starting to cool off, it is by no means cool.  One way I try to beat the heat in the kitchen is by giving the old salad a new spin.  Since nectarines are in season, I decided to try my hand at a "Nectarine Cucumber Salad."  At first glance, it may sound weird, perhaps an odd combo. But trust me when I tell you this salad is super tasty and refreshing.  All you have to do is:
·      slice the nectarines, I used about 2 for B and I
·      add sliced 1 cucumber
·      add cilantro
·      scallions if you like
·      2 Tablespoons vinegar
·      2 Tablespoons olive oil
·      salt and pepper to taste
·      you can add chili flakes for some spice
·      you can also add a tad of honey for a little sweetness
As you can tell it's almost a DIY.  What I really liked about this salad is that you probably have all the ingredients at home.  The nectarines were the only thing I had to purchase.  Truth be told if you don't have cilantro, you can add basil.  Some versions of this salad I've seen add goat cheese, but I found the flavors I listed above just right.  There you have it my friends and the prep time is like 10 min.  I recommend chilling it a bit before serving.
