There are days when you need a little comfort food and to me that calls for pasta or some kind of noodle dish.  My friend Janet gave me this recipe and it is super simple to make and tastes like a million bucks.  Here's what you need:
  • thin spaghetti (16 oz)
  • 1 can of Campbell's chicken broth (Janet says it tastes like dirt if you use another brand!)
  • Heavy Whipping cream (10 oz) (once you dump the chicken broth in the sauce pan use the can to measure the amount of whipping cream)
  • 1 bag of frozen peas
  • about 3 garlic cloves minced ( I always use a ton! But you can adjust to taste)
  • 1 packet of Prosciutto
Steps:
  1. Combine minced garlic, can of Campbell's chicken broth and heavy whipping cream into sauce pan.
  2. Warm for 5 min and then pour 1 bag of frozen peas.  (Omit if you hate peas, I recently fell in love with them but used to hate them)
  3. After sauce gets hot, simmer for 20 minutes and then pour over a bowl of cooked pasta noodles
  4. Add cut up Prosciutto on top and mix
  5. I love red hot chili flakes so I add a few shakes to my bowl. Oh and a little parmesan doesn't hurt either.
It takes about 20 minutes to prepare total, so it's a great meal to whip up after a long work day or if you want to take a break from marinara sauce.  There is a lot of sauce left over so you can make fresh noodles the next day and have it again.  I recommend not mixing the noodles and pasta until you are ready to eat.  The sauce is thin but very flavorful and if you are a sauce lover, just pour some more on!
