Watermelon is one of those summer delights and it is perfect on it's own.  
However, if you want to add a little kick to your watermelon, I've got just the thing for you and it is SUPER easy. 

As you can see above, in typical sealaura fashion, the recipe involves chopping the ingredients and throwing them into a big bowl.  Depending on how many people you are serving, you can use less of each ingredient.  I used 1/2 a watermelon, juice from 2 limes, a handful of mint, and 2 jalapeños, and sea salt to taste.  Be careful when you chop the jalapeños and either use gloves or the plastic bags from the store.  You don't want to touch your eyes or anything else for that matter when you are dealing with these puppies.  Although I used 2 jalapeños I would definitely use 1 or 1.5 next time because the spice factor was intense.  I love spicy food and am not one to shy away from it, but even for me it was a wee bit too spicy.  Remember, you are keeping the seeds and those add a lot of POW! I ended up adding more watermelon to my mix to calm the spice down.
Chill the salad for 2 hours so the flavors can mix and you are good to go.  You can eat it on its own or chop it finer to use it as a salsa.  Let me know if you try it!
