I know I've told you I don't like to cook but I did it again! This time an Asian Noodle Peanut Salad. I know it may sound gross but it is way good. Simpledaisy hosts Fresh Fridays so make sure to check out her delish dish today.



Here are the ingredients I used:
8 oz spaghetti noodles but you can also use soba or wheat pasta. I have tried wheat pasta and I wasn't too happy with it. a little gummy, but maybe it was my cooking!
2 tbsp peanut butter you can use reduced fat to lower the calories and I recommend using the creamy kind
1 tablespoon soy sauce
2 tablespoons of rice vinegar
crushed garlic about a tablespoon 'cuz I like me some garlic!
I used shredded cabbage, sliced yellow peppers , cilantro leaves, and chopped scallions because that's what I had in the fridge. You can omit stuff it you want, but my goal was to pack in the veggies. Especially the cabbage for volume, so I would fill up on veggies and not all noodle. you could also throw in some shredded carrots, sliced cucumbers but I didn't this time
I did add some red pepper flakes and some sesame seeds the teeny ones!


Instructions:

1. Mix the peanut butter, rice wine vinegar, garlic, soy sauce in a bowl

2. cook the noodles according to the package

3. mix noodles with the sauce mixture.

I threw in about 1/2 cup of water into my salad for a little moisture, you could also use chicken broth. I do recommend you add a little liquid.

even though I added red pepper flakes I still used my trusty asian hot sauce 'cuz Ilike me some spice!! Anyway, I made this on wednesday after my first day back at the University. I was starving and had dinner at 4pm I barely made it to 4pm. I was ready for dinner at 2:20 when my last class ended and then night night!! Anywho, I decided to make something yummy and with stuff I had @the sealaura villa. I made a bit of a mess but I had fun cooking. I also took the simpledaisy route and had a little vino too!
